What flour do you feed your sourdough starter?
I prefer to mill my own flour using a GRAIN MILL (use my coupon: rose20 for $20 off). Fresh milled flour is much more nutritious than all purpose flour from the store.
With that being said, a sourdough starter will become much more vigorous when fed with fresh flour and will thrive better due to the increased nutrients in the flour.

What exactly is Sourdough Discard?
In simple terms, sourdough discard is sourdough starter that isn’t active anymore. Meaning, it has fed on the flour that it was fed and is now hungry again or is unfed starter.
Although you can use sourdough discard in a lot of recipes, it’s not quite as vigorous as active starter when rising bread dough.

Ingredients needed to make this recipe
- Sourdough Discard – You can use active sourdough starter if you want. This recipe is such a good use for leftover sourdough starter or discard. The starter adds a depth of flavor you can’t get with regular waffle recipes.
- Eggs
- Salt
- Olive Oil or Melted Butter – May also use melted coconut oil.
- Honey or Sugar – The sweetener is totally optional. I prefer honey but you can use granulated sugar or brown sugar if you wish.
- Baking Soda – The baking soda reacts with the acidity of the starter and makes it bubbly and lends to a fluffy waffle and acts as a leavening agent.

Step by step directions for making this easy Sourdough Waffle recipe
Plug in your WAFFLE MAKER and preheat to the manufacturer’s instructions.
Note: If using a cast iron waffle iron, heat on the stove per directions
In a large mixing bowl, add the sourdough starter discard, eggs, oil, salt, and sweetener (if using). Mix together until well combined.
Once the waffle maker is preheated, add the baking soda and stir in until completely combined.
Adding the baking soda just before making the waffles makes for a fluffier waffle.
Pour in 1/3 cup of the sourdough waffle batter into the hot waffle iron and cook the waffle as directed by your specific waffles instructions.
This recipe makes 4 Belgian style waffles.
Smother with some pure maple syrup and a dollop of butter or your favorite toppings for a delicious breakfast!

Absolutely, you can make a double batch or triple batch of this recipe for large crowds or for freezing in freezer bags for a later date for a quick breakfast.
Variations
Leave out the sweetener and top with salsa, sour cream, and chives for a savory version. Or add your favorite savory toppings for a fun dinner idea!
Add 1/2 cup of pureed pumpkin and 1 tsp pumpkin pie spice while leaving out 1 of the eggs for the perfect Fall breakfast!
One of my favorite waffle recipes is to top them with pizza sauce, cheese, and veggies for a pizza waffle!
Top with peanut butter and chocolate chips for a breakfast the whole family will rave over that is high in protein and delicious!

Storage
Store leftover waffles in an airtight container in the fridge for 3-4 days.
Freeze extra waffles in a freezer bag for up to 3 months and reheat frozen waffles in a toaster oven or in a 300 degree F oven for 10-15 minutes until heated through.
