Easy Sourdough Mixed Berry Cobbler Recipe
This year we have been getting so many berries on our property. This sourdough mixed berry cobbler with crumble topping uses fresh blueberries, raspberries, and blackberries. This is the perfect summer sourdough dessert!
My husband makes the trip around our homestead every morning to pick fresh blackberries and raspberries. He comes in with a bowl full everyday!
This is so exciting for me because I love baking with berries and using them in smoothies and yogurt!

As stated above, we are in the thick of berry picking here on the homestead. The raspberries and blackberries are doing so well this year!
While I always put some up in the freezer, I have been having so much fun using this yummy summer crop in my sourdough baking. This sourdough berry cobbler has been one of my favorite recipes so far!

One of the simple pleasures in the summer is taking time to taste and enjoy the fresh produce. Even sweeter is when it comes from your very own property!
If you have never grown berries, they are so easy to start and they spread every year. We planted a few blackberry bushes a few years ago and now there is a huge patch in our back yard!
I highly recommend growing at least one variety of berries. They bare really well and have a flavor the store-bought berries just can’t replicate.

Why use Sourdough Starter in Recipes?
Sourdough starter is fermented flour and water. This process of fermentation makes any bread products made with it more easily digestible. If you are new to sourdough, start here: How to make a sourdough starter
In recipes that require rising times, the sourdough starter will feed on the flour and water of the recipe building up carbon dioxide therefore making bubbles which causes it to rise.
This process can make it easier for some to process bread products.
Sourdough is NOT GLUTEN FREE. It cannot be tolerated for someone with Celiac disease.
However, if you find yourself having minor bloating and discomfort after eating bread products, it would be a good idea to try long fermented sourdough bread.
You will want to ferment your sourdough for at least 12 hours and up to 24 hours for the full benefits.

What you will need for this recipe
Sourdough Starter
You can use either active sourdough starter or discard (hungry) starter. This will make your cobbler dough.
This cobbler recipe using simple ingredients for a wholesome homemade summer treat.
If your sourdough starter has a liquid on top, you can just stir the starter before dipping out the amount that you will need for this recipe.
Fresh Berries
Any combination of berries will work wonderfully for this recipe.
You could also use frozen berries if you like. I would recommend thawing them in a colander and allowing the excess water to drain off before preparing the berries for the cobbler.
Lemon Juice
Fresh squeezed lemon juice adds such a freshness to this recipe. It is optional but really brings the flavors to another level.
You can also add the lemon zest to the filling for an even deeper lemon flavor.

Honey
Using honey as the sweetener not only adds sweetness but also a wonderful flavor to the cobbler. If you don’t have honey on hand substitute sugar, maple syrup, or agave syrup.
Salt
We use Redmond’s Real Salt in our kitchen, but you can use any salt you have on hand.
Baking Powder
The baking powder is used as a leavening agent. This recipe doesn’t rise or ferment so it needs a little leavening.
Egg
Adding an egg acts as a binder for the topping. It also helps with the puffiness of the crust.
Raw Sugar (for the crumble)
If you don’t have raw sugar on hand a white sugar or brown sugar will work just as well.
Flour (for the crumble)
I used freshly milled whole wheat flour for this application. Any flour (even gluten free) will work just fine. You can use all purpose, bread flour, Einkorn flour, or any other you have on hand.
Olive oil or melted butter (for the crumble)
Olive oil will add more flavor to the crumble than butter. We prefer the flavor of olive oil but if you find it off putting use melted butter.

Step by Step Instructions for making Sourdough Mixed Berry Cobbler with Crumble Topping
Preparing the berry mixture:
Rinse 2 cups of mixed berries of your choice.
In a large bowl, add the berries, the juice of 1/2 a lemon, and the honey. Mix well.
Allow to sit as you prepare the other components of the recipe.
Meanwhile preheat the oven to 400 degrees F.
Preparing the topping:
In a medium sized mixing bowl, combine the starter, salt, honey, baking powder, and egg. Mix well.

Preparing the crumble:
In a small bowl, combine the one cup of flour and the one cup sugar. Add the olive oil or melted butter to make the crumble topping.
Baking the cobbler:
Pour the berry mixture into a 10-inch cast iron skillet or 9×9 baking pan. Pour the sourdough starter mixture over the berries.
Next, pour the crumble over the top evenly.
Bake for 25 minutes in the preheated oven.

Serving suggestion:
Serve warm with a scoop of vanilla ice cream or whipped cream on top.
We love having this straight from the fridge on a hot day. It is so refreshing!
Serve along side an iced coffee on a hot summer day for a really special treat!

I prefer to store mine in the fridge in an airtight container. You can also freeze individual portions in freezer safe containers for later use. It will store in the refrigerator for up to a week and in the freezer for up to 6 months.

Sourdough Mixed Berry Cobbler with Crumble Topping
A tasty summer dessert using fresh berries and sourdough starter. Topped with a sweet crumble topping!
Ingredients
- 2 cups fresh berries (any combination)
- 1/3 cup honey
- Juice from half a lemon
- 1 cup sourdough starter
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp honey
- 1 egg
For the Crumble
- 1 cup raw sugar
- 1 cup flour
- 5 tbsp melted butter or olive oil
Instructions
- Preheat the oven to 400 degrees F.
- In a medium sixed bowl, add the berries, the 1/3 cup honey, and the juice of one lemon.
- Mix well and allow to sit while you make the other components of the recipe.
- Meanwhile, in a mixing bowl add the starter, the 2 tbsp honey, baking powder, salt, and egg.
- Mix well.
- In a separate bowl, add the flour, sugar, and melted butter or olive oil to make the crumble.
- Add the berry mixture to a 10-inch cast iron skillet or 9x9 baking pan and cover with the sourdough mixture.
- Top with the crumble mixture. Use as much or as little as you want of the crumble topping.
- Bake for 25 minutes.
