Homemade Einkorn Waffles made with Fresh Milled Flour

Einkorn is an ancient grain that has a nutty flavor and makes for the best pancakes and waffles!

Recently, I started using it in place of soft white wheat because of the soft texture of the Einkorn.

Whole grain Einkorn flour is full of fiber and nutrition. It also has a weaker gluten structure making it a bit easier to digest for some of those with minor gluten sensitivities.

What is so great about Einkorn?

Einkorn berries boast a lot of nutrition! These little berries are high in many vitamins and minerals as well as providing 14-18% of your daily fiber amount!

Also high in protein, Einkorn flour makes for a more satisfying bread product that will help you feel fuller longer.

Einkorn has a weaker gluten structure that makes for an easier to digest bread. I have noticed a big difference since switching a lot of my diet to this ancient grain!

Why I mill my own flour

I choose to mill my own wheat for many reasons. The flavor, the nutrition, and the added fiber are a few.

To mill your own flour, you will need a grain mill.

Ingredients for making Homemade Einkorn Waffles

  • Fresh-Milled Einkorn Flour – You can substitute with all purpose Einkorn flour or whole wheat Einkorn flour.
  • Salt
  • Baking Soda
  • Baking Powder
  • Milk – May use whole milk, skim milk, or a dairy alternative.
  • Egg
  • Olive Oil – May substitute with melted coconut oil or melted butter.

How to make Fresh Milled Einkorn Waffles

Preheat your waffle maker to manufacturers specifications.

Mix the waffle batter

In a large bowl, add the dry ingredients and mix well.

In a separate bowl, add the wet ingredients and whisk until combined.

Pour the wet ingredients into the dry ingredients and mix until just combined.

You want to only mix until mostly combined for fluffy waffles.

Note: If you have a large family, you can easily double this recipe.

Cook the Waffles

Pour 1/3 cup of batter into the preheated waffle maker and close the lid.

Cook for 3-5 minutes or until golden brown.

Allow waffles to cool completely on a cooling rack before storing.

This recipe makes 4 waffles and may be doubled or even tripled easily!

Variations

Our favorite dish to have with homemade waffles is pizza! Toast the waffle to crisp it up, add toppings and broil until melty and delicious!

Add 1 tsp vanilla and 1 tbsp of sugar or honey to the batter. Top with pure maple syrup and fresh berries for a delicious Saturday morning treat!

After pouring the batter in the waffle maker, add a few chocolate chips for a quick breakfast that the entire family will love!

Top these waffles with sour cream and chives for a savory option!

Make the most delicious sandwiches by adding your favorite toppings to half of the waffle and top with the other half!

Storage

Store leftover waffles in an airtight container in the fridge for 3-4 days.

Freeze in freezer safe bags for up to 3 months.

  • 1 cup Fresh Milled Einkorn Flour
  • 1/2 tsp Salt
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 2 tbsp Olive Oil
  • 1 egg
  • 3/4 cups Milk

Instructions
 

  • Preheat your waffle iron to the manufacturers specifications.
  • In a large bowl add the flour, salt, baking soda, and baking powder. Mix well.
  • In a separate bowl, add the milk, eggs, and oil. Whisk until fully combined.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Pour 1/3 cup of waffle batter into the preheated waffle maker.
  • Close the lid and cook for 3-5 minutes or until golden brown.
  • Allow waffles to cool completely before storing leftovers.
