The Best Homemade Spicy Egg Salad with Jalapenos
The best eggs salad is full of flavor and made with simple ingredients. This egg salad has a spicy twist and makes the perfect sandwich!

Although I love a classic egg salad recipe, this is a fun twist that really updates the recipe and adds even more flavor.
If you are like us and have chickens, then you know that you can, at times, have dozens of eggs at a time.
We use them for so many things and in so many recipes. But, to be honest, my favorite way to use up eggs is in egg salad.
This is the best egg salad I have ever had. I accidentally came up with the recipe, but, boy am I glad I did!
Put this on some homemade whole wheat sourdough bread with some lettuce and you have a wonderful meal!

Back when we had to buy eggs!!
A little back story as to how I came up with this recipe: For the past 2-3 months, our hens were not laying at all! I mean, not ONE EGG in 2-3 months.
So, we caved and bought some organic pastured eggs to supplement during their molt.
Well, as luck would have it, after buying all those eggs, you guessed it, they started laying again in full force!
So, I decided to boil up a dozen of the eggs we bought and wanted to make egg salad with them.

Unfortunately, or maybe fortunately, we didn’t have any pickles. We had eaten them all already.
So, I decided to raid the fridge and see what looked good to me. What I ended up doing is chopping some pickled jalapenos finely and some red onion.
I made some homemade mayo and started putting this together.

Well, it turned out to be the most delicious egg salad I have ever had!
What you will need for this spicy egg salad recipe:
- Boiled Eggs – I prefer hard-boiled eggs, however a medium boiled egg will work fine.
- Pickled jalapenos – Fresh jalapenos will work, but the pickled ones add even more flavor! These spicy peppers really amp up the traditional egg salad.
- Red onion
- Fresh garlic – Although you can use powdered garlic, I highly recommend using fresh in this recipe.
- Salt
- Pepper
- Mayo – My easy homemade mayonnaise recipe is perfect for this egg salad and it’s one less thing you have to buy at the grocery store. It only has a few ingredients: olive oil, egg, dijon mustard or lemon juice, and salt! Much better than the pre-packaged stuff!

How to make this delicious Spicy Egg Salad
To make this salad, you first need to hard boil eggs. I always use the instant pot to make my hard boiled eggs.
I set the rack inside, add 1 cup water, place all the eggs I want to boil, and set to high pressure for 6-7 minutes.
Let the pressure release and they are perfectly boiled. An added bonus is that they are super easy to peel after they have soaked in an ice water bath for 5 minutes.

Chop the eggs and add to a small bowl. Add 1-2 tablespoons of finely chopped jalapenos and red onion.
Chopping the veggies in very small pieces makes for the best spread.
I prefer to mash the egg yolks to make a creamy egg salad. I use a pastry cutter to mash them and it works like a charm!
Using a garlic press, add 1 clove of fresh garlic. Add salt and black pepper to taste.
Mix this up before adding the mayo. Add in 2-3 tablespoons of mayo and mix well.
Add more or less mayo to your preference.
Serve on homemade sourdough bread with fresh lettuce for the best spicy egg salad sandwiches!
Variations
Instead of mayo, add greek yogurt, green onions, and hot sauce for a delicious alternative.
Try adding plenty of fresh herbs, cayenne pepper, and creamy avocado for an egg salad that will wow your taste buds!
Storage
Store left over egg salad in an airtight container in the fridge for 3-4 days.

- 1 mixing bowl
- 1 garlic press
Ingredients
- 3 hard boiled eggs
- 2-3 tbsp finely chopped pickled jalapenos
- 2-3 tbsp finely chopped red onion
- 1 clove fresh garlic, pressed
- salt and pepper to taste
- 2-3 tbsp mayo
Instructions
- First boil your eggs and soak in cold water for a few minutes to make them easier to peel.
- Peel 3 eggs and chop. Add to a mixing bowl. I prefer to mash the egg yolks to make a creamy egg salad.
- Add the finely chopped jalapenos and onions.
- Using a garlic press, add the clove of garlic.
- Add salt and pepper to taste. Mix these ingredients before adding the mayo.
- Add the mayo and mix well.
- Serve on fresh sourdough bread with some lettuce.
