Delicious Sourdough Sweet Potato Casserole Recipe

Sourdough sweet potato casserole is a delicious twist of a traditional Thanksgiving side dish! The warm sweet potato mixture is topped with a tangy, yet sweet sourdough topping!

As we near closer to the holidays, I am having fun writing my menu!

I want easy, quick recipes that are very delicious and perfect to serve for Thanksgiving Dinner.

This is a no wait sourdough recipe, as it uses sourdough starter/discard straight from the jar. No bulk fermentation or waiting!

I love these quick sourdough recipes especially during the busy holiday season. This is a unique way to use sourdough starter but is absolutely delicious!

My goal every year is to set a table with as few dishes from the grocery store as possible and dishes like this are super easy to make ahead and be prepared for the busy day!

Why I love this sourdough sweet potato casserole

This recipe uses simple ingredients and leans on the natural sweetness of the sweet potatoes.

The perfect side dish that can be made ahead of time and warmed on the day of Thanksgiving or your dinner party.

Using only maple syrup or honey for added sweetener, it is a healthier version of the traditional recipe.

This is a great way to get your kids to eat healthy sweet potatoes.

What is Active Sourdough Starter?

Active starter refers to starter that has been fed within the last 24 hours and is active and bubbly.

What is Sourdough Discard?

Sourdough Discard is starter that has not been fed recently. It may have a liquid on top and smell of acetone.

What flour should I feed my starter for this recipe?

You can use all purpose flour, whole wheat flour, rye flour, ancient wheat, or freshly milled flour.

Ingredients for making Sourdough Sweet Potato Casserole

Sweet Potatoes

Use either yellow, white, or purple sweet potatoes.

Honey or Maple Syrup

A bit of natural sweetener adds tremendous flavor to the casserole.

Sourdough Starter

This recipe can be made with active sourdough starter or sourdough discard.

Egg

Cinnamon

Vanilla

Baking Powder

Salt

Step by Step Instructions for making Sourdough Sweet Potato Casserole

Bake the potatoes

Preheat the oven to 350 degrees F.

Wash the sweet potatoes and prick potato skins.

Bake in preheated oven for 45 minutes to an hour or until they can be easily pierced with a fork.

Leave oven on for baking the casserole.

You can also boil the potatoes in a small saucepan after cubing them until fork tender and mash them after they are cooked.

Make Sweet Potato Mixture

Slice baked potatoes in half and scoop out the sweet potato puree.

Add to a large bowl.

*Alternatively, you can cube the sweet potatoes and cook the sweet potato cubes in boiling water until fork tender*

Add the egg, salt, cinnamon, honey or maple syrup, and vanilla.

Make Sourdough Topping

In a small bowl add the sourdough starter, cinnamon, honey or maple syrup, salt, and baking powder.

Mix well.

Note: Sourdough starter does not have to come to room temperature if it was taken from the fridge.

Assemble Casserole

Pour the sourdough mixture over the sweet potato mixture.

Spread evenly over the sweet potato mixture or swirl it in with a butter knife.

Try sprinkling with brown sugar if you prefer for an even sweeter casserole.

Bake the Casserole

Bake the assembled casserole in preheated 350 degree F oven for 20-25 minutes or until the topping is lightly golden brown and set.

Variations

Instead of mashing the sweet potatoes, roast potatoes and add the other ingredients before topping. Roasting the potatoes brings out even more sweet flavor.

For a savory sweet potato casserole, leave out the honey/maple syrup, cinnamon, and vanilla. Instead add a pinch of cayenne pepper and some sauteed onions and garlic!

Storage

Store in an airtight container in the fridge for 3-4 days.

  • 1 10 inch cast iron skillet or 9 inch baking dish

Ingredients
  

For the sweet potato filling

  • 4-6 medium to large sweet potatoes
  • 1 egg
  • 1/4 cup honey or maple syrup
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

For the sourdough topping

  • 1 cup sourdough starter or discard
  • 1/4 cup honey or maple syrup
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1 egg

Instructions
 

Making the filling

  • Preheat oven to 350 degrees F.
  • Wash sweet potatoes and pierce skins.
  • Bake for 45 minutes to an hour or until fork tender. Leave the oven on to bake the casserole.
  • Slice baked sweet potatoes in half and scoop out the puree into a large bowl.
  • Add remaining ingredients and mix very well.
  • Pour in a 10 inch cast iron skillet or 9 inch baking dish.

Making sourdough topping

  • In a bowl add all the ingredients and mix well to combine.

Assemble the casserole

  • Pour the sourdough topping over the sweet potato mixture.
  • Spread evenly or swirl into mixture with a butter knife.

Bake the casserole

  • Bake for 20-25 minutes or until the topping is lightly golden brown.

Notes

Store in an airtight container in the fridge for 3-4 days.
Variations:
Roast cubed sweet potatoes in 350 degree F oven until for tender. Mix all ingredients and proceed as noted above for a chunkier casserole.
