What is Cream of Wheat, anyway?

Traditional cream of wheat is cooked wheat that has been milled coarsely. It has a porridge consistency and can be cooked in water or milk.

This fresh milled version makes this healthy breakfast staple even more delicious, nutritious and is a filling breakfast.

Best wheat berries for making cream of wheat?

The kind of wheat you choose is completely your preference. For a milder flavor, lean into hard white wheat or soft white wheat, for a stronger flavor, lean into red wheat or ancient grains.

  • Einkorn – An ancient grain that boasts a lower gluten content and a rich, nutty flavor. It also boasts even more nutritional value than modern day wheat varieties.
  • Hard Red Wheat Berries– Rich in flavor with a higher gluten content.
  • Spelt – Another ancient grain that boasts an earthy, nutty flavor.
  • Hard White Wheat Berries– Mild in flavor with a high gluten content. Hard wheat also mills into a coarser flour.
  • Soft White – Mildly sweet flavor with low gluten/high moisture content. Soft white wheat berries make a very delicious cream of wheat!

Ingredients you need to make this hot breakfast porridge

Making your own cream of wheat only takes a few simple ingredients and is so much more delicious!

  • Whole Wheat Berries – This recipe is so customizable! You can choose whichever wheat berry you want, and the recipe will turn out great!
  • Water – For best results, use filtered water.
  • Milk – You can use dairy milk or a dairy free alternative.
  • Salt – I find that a fine sea salt works best in this recipe. You will only need a pinch of salt.
  • Optional Ingredients – Honey/Real Maple Syrup, vanilla extract, sugar, cinnamon, etc…

I find that stone-milled flour is much easier to get to the coarseness for cream of wheat.

How to make homemade cream of wheat

Mill 2/3 cup of wheat berries on the coarse setting of your grain mill. This will yield 1 cup of flour.

If you have a Harvest grain mill, this will be at the 5pm-6pm setting.

In a 4-quart medium saucepan or larger, add 2 cups of water and 1 cup of milk.

Bring this liquid to a simmer over medium heat and pour in the coarse fresh flour whisking as you add the flour to prevent clumping.

Continue to whisk until the mixture is thick like porridge and has a creamy texture.

If you stop whisking, it may stick to the bottom of the pan

Take off the heat and add a pinch salt and any other optional ingredients.

Variations

Use this basic cream of wheat recipe and customize it to your families taste! Below is just a few of my favorites!

Top your bowl of cream of wheat with a drizzle of honey, a pat of butter, and 1/4 cup of pecans for a “butter pecan” version.

Consider adding 1 tbsp brown sugar and 1 tbsp maple syrup for an absolutely delicious version!

For a summer version, top with fresh fruit and coconut with a drizzle of honey. Even if you have a picky eater, this version is sure to win them over!

Can I use store bought whole wheat flour for this recipe?

While you can certainly cook whole wheat flour for a thick cereal like porridge, since it is milled finely, the texture won’t be quite the same.

Can I mix different wheat berries for this cream of wheat?

Absolutely! This recipe if very customizable. I would recommend 1/3 cup of each wheat berry.

Ingredients
  

  • 1 cup Coarsely milled fresh milled flour 2/3 cup wheat berries
  • 1 cup Milk
  • 2 cups Water *see notes*
  • pinch Salt

Instructions
 

  • Mill your wheat berries on the coarse setting of your grain mill. On the Nutrimill Harvest, I use the 4pm-5pm setting.
  • In a medium saucepan, add 1 cup milk and 2 cups of water.
  • Bring this mixture to a simmer and while whisking add the flour.
  • Continue whisking until the mixture is thick and creamy, about 1-2 minutes.
  • Serve immediately with your favorite toppings.

Notes

You can use all water or all milk. It turns out great either way!
Top with your favorite sweetener, fruit, or nuts for a filling and delicious breakfast cereal.

    I didn’t grow up with cream of wheat, so I had no idea how this would taste. It is absolutely delicious! I used cinnamon, honey, pecans and blueberries. Yum!
