Having healthy, wholesome snacks is a priority in my kitchen. These fresh milled crackers are by far my favorite fresh milled snack!

In this post, I will cover the best wheat berries to use to make these crackers, tips for the crunchiest, crispiest crackers, and step by step instructions!

Ditch the store-bought snacks and make these healthy crackers made with only a handful of ingredients.

Why make crackers with Fresh Milled Flour?

Fresh Milled flour has a tremendous amount of flavor and nutrition.

  • Increased Flavor – Fresh whole grain flour has a wonderful nutty flavor that makes for a richer tasting cracker.
  • Healthier than store-bought flour – Fresh milled flour contains over 30 essential nutrients and a high amount of fiber for a cracker that is packed with nutrition.
  • No preservatives – Only a few ingredients versus 15-20? YES! Store-bought crackers have a ton of unnecessary ingredients including preservatives.

Best wheat berries for making Fresh Milled Crackers

  • Hard White Wheat or Hard Red Wheat – Either of these will work great! Hard white is mild in flavor while hard red has a bit more of a nutty flavor.
  • Soft White Wheat Berries – Soft white wheat mills into a super fine flour that is mildly sweet.
  • Spelt – Rich and nutty in flavor, spelt is an ancient grain that makes deliciously flavorful crackers!
  • Einkorn – Einkorn mills into a super fine, buttery flour that has a nutty, slightly sweet flavor for a tasty cracker! Keep in mind if you use Einkorn flour you will need to adjust by adding 1/2 cup more flour.

Ingredients for making Fresh Milled Crackers

You can make your own crackers with just a few wholesome ingredients!

  • Fresh Milled Flour – I use either Spelt or Einkorn for these crackers. You will need 2 cups of flour.
  • Olive Oil – You can substitute with Avocado Oil or melted butter or coconut oil. You will need 1/4 cup.
  • Salt1/2 teaspoon
  • Warm Water1/3 cup water
  • Coarse Sea Salt for topping

Step by step instructions for making this easy recipe

Preheat the oven to 400 degrees F.

Mill your wheat berries on the finest setting of your particular grain mill.

In the bowl of a food processor, combine the flour and salt.

Warm 1/3 cup water to 95-100 degrees F.

Add the oil to the flour mixture and pulse until combined.

You can also mix these in a mixing bowl into a ball of dough

With the food processor running, drizzle in the water until a thick dough comes together into a cohesive ball.

TIP: You don’t want the dough to be dry and crumbly. Aim for a ball of dough that stays together and is not too sticky to work with

Take 2 pieces of parchment paper and spritz a little bit of oil on each. Spread the oil around to cover the entire side of the paper.

Turn the dough onto one of the pieces of parchment paper, oil side up. Place the other piece of parchment paper on top of the dough, oil side down.

Roll the dough out as thinly and evenly as possible. I find this to be easiest if I lay another piece of parchment paper over the dough and roll out.

Aim to roll the cracker dough to the full size of the piece of paper for the thinnest possible.

Remove the top piece of parchment paper.

Using a pizza cutter, score the dough into small squares or to the size square you prefer for your crackers.

Top the crackers with some coarse sea salt.

Move the piece of parchment paper with the cracker dough onto a half sheet baking pan.

Bake for 12-15 minutes or until lightly golden brown around the edges.

Allow the crackers to cool before breaking apart to increase the crispiness.

Flavor Variations for Homemade Crackers

Add 2 tsp of Italian seasoning to the flour and salt for a super tasty cracker!

Consider adding 1/2-1 cup of shredded sharp cheddar cheese for homemade cheese crackers.

For a seeded cracker, top the cracker dough with sesame seeds prior to baking.

Include 1 tsp of garlic powder and 1 tsp rosemary for a garlic-rosemary treat!

Store cooled leftover crackers in an airtight container on the counter at room temperature for 3-5 days.

Frequently Asked Questions

Why are my crackers not crispy?

Make sure to roll the dough out as thinly as possible. You want the dough to be thick but not dry and crumbly. Allow the crackers to cool before breaking apart to increase the crispiness.

Can I make these gluten free?

Sure! Consider using Sorghum, Buckwheat, or Quinoa flour.

Can I use Einkorn flour for these crackers?

Yes, just increase the flour by 1/2 cup.

  • Take 2 pieces of parchment paper and spritz a little bit of oil on each. Spread the oil around to cover the entire side of the paper.
    Turn the dough onto one of the pieces of parchment paper, oil side up. Place the other piece of parchment paper on top of the dough, oil side down.
  • Roll out the dough with a rolling pin as thinly and evenly as possible, aiming to cover the entire piece of parchment paper.
  • Remove the top piece of parchment paper and transfer the piece with the cracker dough over onto the baking sheet.
  • Score the crackers with a pizza cutter into the size squares you prefer. Top with coarse sea salt.
  • Bake in the preheated oven for 12-15 minutes or until the crackers are lightly golden brown on the edges.
  • Allow the crackers to cool before breaking apart and storing.
