Although you can use Einkorn all purpose flour for these pancakes, I highly recommend using fresh milled flour for optimum flavor and nutrition.

Ingredients you will need to make this fluffy pancake recipe

  • Fresh Milled Einkorn Flour – 1 cup (mill 2/3 cup of Einkorn berries).
  • Salt – 1/4 tsp.
  • Baking Soda – 1/2 tsp.
  • Baking Powder – 2 tsp.
  • Milk – 1 cup. I used whole milk, but a dairy substitute like almond milk or oat milk will work as well.
  • Egg – 1 egg.
  • Olive Oil, Melted Butter, or Melted Coconut Oil – 1 tbsp.
  • Optional Add-ins – 1 cup blackberries, raspberries, strawberries, blueberries, or chocolate chips. I chose fresh blackberries.

Step by step instructions for making these pancakes

Mill the Einkorn berries

Mill 2/3 cup of Einkorn berries in your grain mill on the fine setting.

Mix the batter

Preheat a cast iron skillet over low to medium heat.

You can also use a hot griddle or a stainless steel pan for cooking the pancakes.

In a large mixing bowl, add the wet ingredients of milk, egg, and oil or butter. Mix until fully combined.

In a separate bowl, mix the dry ingredients of flour, salt, baking soda, and baking powder.

Pour in the flour mixture into the wet mixture and mix until just combined. DO NOT OVER MIX as this will lead to tough pancakes.

Add your favorite berries or chocolate chips and fold in until evenly combined.

Cook the pancakes

Spray the pan with some olive oil or put a small pat of butter in the skillet.

Scoop 1/3 cup of the pancake batter into the pan.

To make smaller pancakes use 1/4 cup of batter.

Let cook for 3-4 minutes or until bubbles appear on top of the pancake.

Flip and let cook an additional 1-2 minutes or until golden brown.

Continue until all the batter is used.

Drizzle pure maple syrup on top and enjoy!

This recipe makes 4-5 pancakes and can be doubled or tripled for larger families.

Storage

Store cooled pancakes in an airtight container in the fridge for 2-3 days.

Make a triple batch for extra pancakes and freeze them in freezer safe bags for up to 3 months.

Can I use store bought Einkorn flour?

Yes, store bought Einkorn flour will work just fine for this recipe.

Can I make the batter ahead of time and refrigerate?

Sure, just make sure you store it in a bowl that has an airtight lid and stir the batter before cooking.

Is Einkorn flour gluten-free?

No, even though it contains a much weaker strain of gluten, it still has gluten and is not advised for those with CELIAC DISEASE.

Ingredients
  

  • 1 cup Fresh Milled Einkorn Flour Mill 2/3 cup
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1 cup Milk
  • 1 Egg
  • 1 tbsp Olive Oil May use melted butter or coconut oil

Instructions
 

  • Preheat a cast iron skillet over low-medium heat.
  • Mill 2/3 cup of Einkorn berries on the fine setting of your grain mill.

  • Fold in any add-ins you want from fresh berries to chocolate chips.
  • Lightly spray the pan with olive oil or brush with butter.
  • Scoop 1/3 cup of the pancake batter into the hot pan.
  • Cook 3-4 minutes on the first side until bubbles appear on the top of the pancakes.
  • Flip and cook an additional 1-2 minutes until golden brown.
