Easy Sourdough Discard Zucchini Fritters

It’s summertime here on the homestead and we are raking in a ton of zucchinis! I have made zucchini bread and zucchini relish but wanted to make something a little different. These easy sourdough discard zucchini fritters fit the bill!

This delicious treat is a great way to use up extra zucchinis. You don’t have to use active sourdough starter making this a quick sourdough recipe to make.

If you have a sourdough starter there is a good chance you have discarded starter or inactive starter from time to time.

What is active starter?

Active sourdough starter is starter that has been fed in the last 24 hours and is bubbly. You can feed the starter all purpose flour or whole wheat flour and wait for several hours to see the starter get bubbly and active.

Active starter is ideal for breads or recipes that require a rise.

What is sourdough discard?

In contrast, sourdough discard is starter that is hungry. It’s been over 24 hours since it was fed and it will have developed a liquid on top called “hooch”. It may smell like acetone and will have little to no bubbles.

Sourdough discard is great for quick recipes like these sourdough zucchini fritters.

This is a great recipe if you are new to using sourdough because it doesn’t require a rise or any special techniques to make.

No wait recipes use the sourdough starter alone with extra flour added.

This recipe uses up extra zucchini you have harvested. We all know they come in like crazy all at once!

What you will need to make these sourdough discard zucchini fritters:

Sourdough Starter

This recipe uses sourdough discard however you can use active sourdough starter just as well.

Grated Zucchini

The harvest of zucchini may seem overwhelming but once you get a few zucchini recipes, you will look forward to the influx every gardening season.

Eggs

I use room temperature farm fresh eggs.

Olive Oil

You may substitute with avocado oil, melted butter, or coconut oil. A little olive oil added to the fritter batter makes for a crispier fritter.

Salt

I use Redmond’s Real Salt in my baking for its mild flavor. Any sea salt will work just fine.

Baking Soda

Baking soda is a leavening agent that reacts with the acidity of the sourdough starter making a very fluffy and bubbly batter.

Herbs (optional)

Fresh herbs make for such a delicious fritter! I use Thyme and Sage for this recipe.

Step by Step Instructions to make these Easy Sourdough Zucchini Fritters:

This recipe uses shredded zucchini. I like to use a box grater however you can use a food processor is you want.

Once the zucchini is grated, place it in a colander and add 1/4 tsp salt. Mix in the salt and allow the zucchini to sit for 10-15 minutes while you gather your other ingredients.

Meanwhile, in a large bowl, combine the starter, oil, egg, herbs (if using) and salt. Save the baking soda until just before frying.

Preheat a cast iron skillet over medium heat.

Squeeze the zucchini to remove as much water as possible. You may also pat it dry with paper towels.

The dryer the zucchini the better the recipe will turn out.

Add to the large bowl with the other ingredients. Mix well. Add the baking soda and fold it in until well combined.

Add 1-2 tsp of oil or butter to the preheated cast iron skillet.

Scoop 1/3 cup of the mixture into the skillet. Allow to fry for 2-3 minutes per side until golden brown.

Place each fritter on a cooling rack until all are done.

Serving Suggestions

Serve with sour cream and top with fresh chopped green onions for a delectable treat!

Serve these delicious sourdough zucchini fritters as a side dish to fish or chicken.

These are also great on bread with a little mayo for a tasty sandwich.

Storage

Store in the fridge for up to 5 days.

Freeze in freezer safe container for up to 3 months.

Easy Sourdough Discard Zucchini Fritters

Ingredients

  • 1 cup sourdough discard. May use active starter as well.
  • 1 cup grated zucchini
  • 2 tbsp olive oil
  • 1 tsp salt
  • 2 tbsp fresh herbs (optional)
  • 1 large egg
  • 1 tsp baking soda

Instructions

Grate 1 cup of fresh zucchini and place in a colander.

Sprinkle with 1/4 tsp salt and allow to sweat while you prepare the other ingredients.

Preheat a cast iron skillet over medium heat.

In a large bowl, add sourdough starter, oil, egg, salt, and herbs if using.

Mix well. Squeeze out the zucchini to remove as much water as possible.

Add to bowl and fold in.

Add the baking soda and mix well.

Scoop 1/3 cup of mixture into preheated skillet.

Cook for 2-3 minutes per side or until golden brown.

Notes

These will store in an airtight container in the fridge for up to 5 days.

Store in freezer safe bag or container for up to 3 months.
