Chocolate Banana Nut Muffins – Made with Freshly Milled Flour

Muffins are quite possibly the easiest bread product to make when transitioning to freshly milled flour in your kitchen. Moist, delicious, and hearty, these chocolate banana nut muffins made with freshly milled flour are sure to be a hit in your home!

Why Freshly Milled Flour?

Freshly milled flour contains 40/44 essential nutrients. Packed with fiber, the flour also contains vitamin E and a slew of vitamins and minerals.

This makes the bread products more filling and satisfying. Also, freshly milled flour contains the enzyme necessary for digestion of the bread.

All in all making it a powerhouse in your home for nutrition. But, don’t think all of this nutrition makes for a bland, dense, tasteless bread product!

Products made with freshly milled flour are so much more flavorful than their store bought counterparts.

What you will need to makes these muffins:

  1. Cocoa powder.
  2. Salt.
  3. Baking soda.
  4. Baking powder.
  5. Egg.
  6. Vanilla Extract.
  7. Banana.
  8. Milk. May use dairy free milk if you wish.
  9. Walnuts.
  10. Olive oil. May use any liquid oil you wish.
  11. Honey. May use maple syrup instead.
  12. Optional: 1/4 cup of Millet. Lends a delightful crunch to the muffin.

Preheat your oven to 400 degrees F.

In a large mixing bowl, combine the flour, cocoa powder, salt, baking soda, baking powder, and millet if using. Mix well.

In a separate bowl, combine milk, oil, honey, egg, mashed banana, and vanilla extract. Mix well.

Pour wet ingredients into the dry ingredients. Mix well.

Prepare a 12 cup muffin tin.

Using a large spoon or cookie scoop, scoop the batter into the muffin cups.

Bake for 15 minutes.

Turn onto a cooling rack to cool completely.

Equipment

  • 1 12 cup muffin tin
  • 2 mixing bowls

Ingredients
  

  • 1 1/2 cups freshly milled flour may use any variety of grain, even gluten free
  • 1/2 cup cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup millet optional, but, you really need to try this!
  • 1/3 cup olive oil
  • 1/2 cup honey
  • 1 banana, mashed
  • 1 egg
  • 1 cup milk may use buttermilk, sweet milk, or dairy free milk
  • 1 cup chopped walnuts
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl, combine the flour, cocoa, salt, baking soda, baking powder, and milled it using. Mix well.
  • In a separate bowl, combine remaining ingredients and mix well.
  • Prepare your muffin tin.
  • Scoop the batter into the muffin cups evenly.
  • Bake for 15 minutes.
  • Turn onto a cooling rack to cool completely.

    Definitely a keeper. I used fresh milled Einkorn, so I cut back a tad on the liquid. Also, I swapped out a 1/4 cup of the oil and used 1/4 c unsweetened applesauce. This particular time I included walnuts, but I have used millet in past recipes, which I also liked. It had just the right amount of chocolate and the banana kept them very moist. I have a housebound relative I cannot wait to share them with. Thank you, Mary, great job!!
