Chocolate Banana Nut Muffins made with Freshly Milled Flour

These muffins will be an instant hit! Sweet and full of chocolate goodness, these muffins are delicious and nutritious!

Equipment

  • 1 12 cup muffin tin
  • 2 mixing bowls

Ingredients

  • 1 1/2 cups freshly milled flour may use any variety of grain, even gluten free
  • 1/2 cup cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup millet optional, but, you really need to try this!
  • 1/3 cup olive oil
  • 1/2 cup honey
  • 1 banana, mashed
  • 1 egg
  • 1 cup milk may use buttermilk, sweet milk, or dairy free milk
  • 1 cup chopped walnuts
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl, combine the flour, cocoa, salt, baking soda, baking powder, and milled it using. Mix well.
  • In a separate bowl, combine remaining ingredients and mix well.
  • Prepare your muffin tin.
  • Scoop the batter into the muffin cups evenly.
  • Bake for 15 minutes.
  • Turn onto a cooling rack to cool completely.
