The Best Quiche with Sourdough Crust in Cast Iron

Looking for a quick and easy dinner recipe? Try this quiche with sourdough crust! It uses starter as the crust and is made in a cast iron skillet for a one pan meal!

If you keep a sourdough starter, chances are you sometimes find yourself with some extra sourdough discard (unfed starter).

Recipes like this are perfect for using that leftover starter in and will be a crowd pleaser for the family, as well!

Quick – This recipe is an easy and fast one pan meal to get on the table on the busy evenings. It would also make a great breakfast!

No wait sourdough – Most sourdough recipes require you to mix up a dough and let it ferment for several hours. No wait recipes use the starter only, so there is no extra time allowing the recipe to ferment.

Delicious – Using simple ingredients doesn’t mean simple taste! This quiche is packed with flavor and will delight the taste buds!

Ingredients you need to make a quiche with sourdough crust

  • Sourdough Starter – May use active sourdough starter or sourdough discard.
  • Eggs
  • Chopped Veggies – Use veggies you and your family like. I used chopped onions, jalapenos, and mushrooms.
  • Shredded Cheese – I buy blocks of cheddar and shred them on a box grater.
  • Milk – I used whole milk, but you can use any milk you have on hand.
  • Salt
  • Pepper
  • Garlic – May use garlic powder or fresh garlic.

Ingredients for sourdough quiche: 1. Eggs in bowl. 2. Veggies chopped on cutting board. 3. A measuring cup with milk in it. 4. A measuring cup full of shredded cheese sitting on a cutting board. 5. A cup full of sourdough starter.

How to make this recipe

Meanwhile, in a large mixing bowl combine the eggs, veggies, salt, pepper, and garlic.

If you buy block cheese, use a box grater to shred 1 cup of cheese.

After oven has preheated, carefully remove the skillet from the oven and pour 1 cup of starter in.

Quickly spread out the starter evenly in the pan and up on the sides as well.

It will start to bake immediately so spread as quickly has you can.

Place back in the oven for 5 minutes.

Remove the pan from the oven and sprinkle the shredded cheese on top of the crust.

Pour the egg mixture over the cheese.

Place back in the oven and bake for 35-40 minutes or until the eggs are set and firm.

Serve the quiche along side a serving of veggies for the perfect meal.

Variations

Add 1-2 cups of spinach to the egg mixture for added nutrition.

Instead of chopped veggies, try adding skillet fried potatoes to the mixture. This variation is delicious!

Storage

Store leftover quiche in an airtight container in the fridge for 2-3 days.

Equipment

  • 10 inch cast iron skillet

Ingredients
  

  • 1 cup Sourdough Starter
  • 6 Eggs
  • 1 cup Chopped Veggies
  • 1/2 cup Milk
  • 1 cup Shredded Cheese
  • 1/2 tsp Salt Add more to taste after it is baked if you prefer
  • 1 tsp Black Pepper
  • 2 tsp Garlic Powder

Instructions
 

  • Preheat the oven to 350 degrees F with a 10 inch cast iron skillet inside to preheat with the oven.
  • While the skillet and oven preheat, mix the eggs, veggies, milk, salt, pepper, and garlic in a large mixing bowl.
  • Once the skillet is preheated, carefully remove it and pour 1 cup of starter in the pan.
  • Quickly spread out the starter evenly in the pan and up the sides.
  • Place back in the oven for 5 minutes.
  • Remove the pan and sprinkle the cheese over the crust.
  • Pour the egg mixture over the cheese.
  • Put back in the hot oven for 35-40 minutes or until the eggs are set or firm.

Notes

Store leftover quiche in an airtight container in the fridge for 2-3 days.
