How to fry the perfect over easy egg in a Cast Iron Skillet

For years and years, cast iron has been my only cookware. I love how non-stick it becomes with regular use and how easy it is to maintain. Frying eggs in a cast iron skillet is incredibly easy and with a few tips, you can fry the perfect over easy egg in your cast iron skillet.

When I first started using cast iron, everything stuck to it and I quickly became discouraged. However, after a little research and patience, I learned how to properly season and maintain it so that it is non-stick and easy to use in my cooking.

I have had many people tell me that they think it’s impossible to fry the perfect egg in a cast iron skillet because everything just sticks like crazy!

I’m happy to say, there is a way and I’m going to share with you my tips for being successful in using your cast iron for eggs.

Why use Cast Iron?

Cast iron is one of those home goods that is generational. It can be handed down for many, many years. In fact, I personally know people who have their great-great grandparents cast iron and are still using it to this day!

There are not many cookware options that can tout that statement.

Cast iron is incredibly easy to season and use for all purposes of cooking. I use my cast iron for frying, sauteing, baking, and deep frying.

Being that it is so versatile, you really only need a few good pieces in your kitchen to satisfy all of your cooking needs.

How to season a Cast Iron skillet?

These days most cast iron pieces come pre-seasoned. Which is great! However, if you find yourself needing to season a pan, it is so simple!

Preheat your oven to 350 degrees F with the piece of cast iron you are going to be seasoning in the oven while it preheats.

After the oven has completed the preheating process, carefully remove the cast iron from the oven.

You will want to put a very thin layer of fat on the pan. I use a cast iron seasoning wax, but, you can use flax oil, coconut oil, or avocado oil.

The key is to make sure you only put a very thin amount of oil on the pan and wipe it in very well removing any excess before returning to piece to the oven.

You want to put the thin layer of oil all over the piece, even the bottom.

Steps to frying the perfect over easy egg in a Cast Iron skillet:

Step 1: Preheat the skillet over low-medium heat for at least 5 minutes.

Step 2: Place a dab of butter in the skillet and allow to melt. Move the butter over the pan with a spatula.

Step 3: Add the add carefully so as to not break the yolk.

Step 4: Allow the egg to cook until the white is set completely.

Step 5: Gently turn the egg and remove from the heat.

Step 6: Allow to cook an addition 30 seconds and remove from the pan.

This method has worked for many years in my kitchen.

I make over easy eggs in my cast iron every single morning and find this is the best method to the perfect egg!

    1. If you’re reseasoning, I put mine in for about an hour. Turn the oven off and allow it to cool completely before removing the pan.

  2. How often do you reseason it? and when you put it back in the oven once oiled do you keep it at 350 the whole hour?
