These chickpea flour pancakes are so fluffy and delicious! You will forget they are gluten free!

I have been grinding my own grains for years now and am always looking for new grains to grind into flour for different applications.

Why I love Chickpea Flour

Several years ago, I came upon a post about grinding chickpeas into flour. I happened to have a lot of dried chickpeas in the pantry and decided to give it a try. It made the most beautiful, buttery flour!

It made perfect sense to make pancakes with this wonderful flour.

They turned out amazing and we decided we had to keep these in the rotation on our pancake Saturdays!

Being that these are gluten free make them great for those who still want to have pancakes on the weekends without the gluten!

Flour made from chickpeas is very airy, buttery, and mild in flavor. Making this flour the perfect pancake flour.

To make these you will need:

  1. Baking soda.
  2. Salt.
  3. Buttermilk or Milk Kefir.
  4. Vanilla (optional)
  5. Olive Oil (optional)
  6. Egg.
  7. Baking Powder.

Preheat skillet on medium heat on stovetop. Brush with butter or olive oil.

In a medium bowl, add the flour, baking powder, baking soda, and salt.

In a separate bowl, mix the buttermilk/kefir, egg, vanilla and oil if using.

Mix wet with dry ingredients.

Scoop 1/3 cup of mixture into skillet and cook for 2 minutes on each side, flipping only once.

Top with your favorite toppings and enjoy!

Equipment

  • 1 Grain Mill optional, can purchase chickpea flour.
  • 1 Skillet

Ingredients
  

  • 1 cup chickpea flour you can grind dried chickpeas or buy preground chickpea flour.
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup buttermilk or milk kefir
  • 1 tsp vanilla optional
  • 1 tbsp olive oil optional

Instructions
 

  • In a medium bowl, combine flour, salt, baking soda, and baking powder.
  • In a separate bowl, mix buttermilk/milk kefir, egg, vanilla, and olive oil.
  • Preheat skillet on medium heat. Brush with butter or olive oil.
  • Combine the wet and dry ingredients. Mix just until combined.
  • Pour 1/3 cup of the mixture into skillet.
  • Cook for 2 minutes per side. Flip only once.
