In a medium bowl, combine flour, salt, baking soda, and baking powder.
In a separate bowl, mix buttermilk/milk kefir, egg, vanilla, and olive oil.
Preheat skillet on medium heat. Brush with butter or olive oil.
Combine the wet and dry ingredients. Mix just until combined.
Pour 1/3 cup of the mixture into skillet.
Cook for 2 minutes per side. Flip only once.
