Homemade Hoagie Rolls Made With Fresh Milled Flour

In my opinion, there’s not much better than a hearty sandwich for lunch or dinner! These fresh milled hoagie rolls are perfect for piling your favorite toppings on. Soft, chewy, and delicious!

Fresh milled flour adds a ton of flavor and nutrition making for the most delicious sandwiches that are anything but bland!

Why use Fresh Milled Flour?

  • Flavor – Whole grain flour has so much more flavor than store bought flour. Nutty and buttery, it lends a flavor profile that cannot be imitated.
  • Nutritional value – The health benefits of fresh flour are well documented. Fresh milled flour is very high in fiber, vitamins, minerals, and enzymes.
  • Real Flour – Fresh milled flour is the only flour that isn’t “dead”. All purpose flour (bread flour, white flour) has been sifted of all of the key nutrients and fiber. Store-bought flour can never compete with home milled whole grain flour.

Ingredients to make Fresh Milled Hoagie Rolls

  • Fresh Milled Flour – For this recipe, I prefer a 50/50 mixture of hard red wheat and Kamut flour. You can use hard white wheat, hard red wheat, Spelt, or Kamut flour with great results. The main thing to remember is you need to use hard wheat for this recipe.
  • Yeast – I prefer to use instant yeast, but you can use active dry yeast if you proof it first.
  • Oil – You can use olive oil, avocado oil, melted coconut oil, or melted butter.
  • Honey – You can use maple syrup as well or omit the sweetener all together.
  • Salt
  • Egg

Step by Step Instructions for making Fresh Milled Hoagie Rolls

Mix the dough/Soak the flour

Mill your wheat berries on the fine setting of your grain mill.

Warm the water to about 100 degrees F.

In the bowl of a stand mixer with a dough hook attachment, add the warm water, oil, honey, egg, and whole grain flour.

Mix on speed 1 until the a soft dough has formed.

Cover and let the dough rest for 30 minutes.

After 30 minutes, add the yeast and the salt.

Knead the dough

Knead the dough on speed 2 for 6-8 minutes or until the dough is soft, stretchy, and glossy.

First Rise

Place the dough in a lightly greased large mixing bowl.

Cover with plastic wrap or a damp kitchen towel and let the dough rise at room temperature for 1-2 hours or until doubled.

Shape/Second Rise

Deflate the bread dough and turn it over onto your work surface.

You can spritz the surface with a bit of water or oil. Try to not add extra flour is at all possible.

Divide the dough into 8 equal pieces.

Shape each ball of dough by patting out into a rectangular shape and then rolling back up tightly. Roll them seam down on the table to build surface tension.

Place each roll seam side down on a parchment paper lined baking sheet.

Cover them with plastic wrap or a damp tea towel and let rise for 30 minutes to an hour.

Bake the Rolls

Preheat the oven to 400 degrees F.

Using a razor blade or very sharp knife, make a slash down the center of each roll.

Brush with an egg wash.

Bake for 18-20 minutes or until golden brown.

Cool on a wire rack.

Storage

Store in a plastic bag on the counter for 3-4 days.

These rolls freeze very well in a freezer bag for up to 3 months.

Can I make these with Einkorn flour?

Einkorn flour behaves quite differently than modern wheat and even some other ancient grains. I would recommend using THIS RECIPE and shaping into hoagie rolls instead.

How can I use active dry yeast instead of instant yeast?

Reserve 1/4 cup of the water and heat to 95 degrees F after the flour mixture has soaked. Add the yeast to the water and mix. Cover and let proof for 5-10 minutes until it is foamy before adding to the dough along with the salt.
