Ingredients to make these homemade peanut butter cookies

  • Sugar – I use raw organic cane sugar. Of course you can use white sugar or 1/2 regular sugar and 1/2 brown sugar.
  • Olive oil or softened butter – I use olive oil, but softened butter or softened coconut oil will work just fine.
  • Eggs
  • Vanilla Extract
  • Creamy Peanut Butter – I use a natural peanut butter, but you could substitute with crunchy peanut butter or almond butter if there is an allergy.
  • Einkorn Flour – I use fresh milled but you can use Einkorn all purpose flour, as well.
  • Salt
  • Baking Soda
  • Baking Powder
  • Chocolate Chips (OPTIONAL)

How to make these Einkorn cookies

Prepare a baking sheet or cookie sheet by lining with a piece of parchment paper.

Mix the batter

In a large bowl add the sugar and olive oil or softened butter. Mix with a whisk until completely combined.

You can also mix these cookies in a stand mixer with a cookie paddle attachment

Add the eggs, vanilla, and peanut butter. Mix well.

Tip: Measure the oil or butter in a measuring cup and measure the peanut butter in the same cup to make it easier to get out

In a separate bowl, mix the flour, salt, baking powder, and baking soda.

Add the dry ingredients to the wet ingredients and mix with a wooden spoon until combined and no dry flour remains.

If using chocolate chips, fold them in after the dough is mixed.

Scoop out the cookies

Using a small cookie scoop, scoop out the cookies onto the prepared pan.

Optionally, you can take a fork and criss cross a pattern on top of the cookies.

Refrigerate the cookies for 30 minutes.

Bake the cookies

Preheat the oven to 350 degrees F.

Once preheated, take cookies out of the fridge and bake for 15-18 minutes.

Cool the cookies on a wire rack completely before storing.

Storage

Store these cookies at room temperature for 3-4 days in an airtight container.

You can freeze these cookies in freezer safe bags for up to 3 months.

  • 1 cup Sugar
  • 1/4 cup Olive oil or softened butter
  • 2 Eggs
  • 1/2 cup Peanut butter
  • 1 tsp Vanilla
  • 2 cup Einkorn flour I use fresh milled flour
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
