Healthy Fresh Milled Einkorn Peanut Butter Cookies

Chewy and incredibly delicious, these Einkorn Peanut Butter Cookies will be on constant rotation in your kitchen!

Equipment

Ingredients

  • 1 cup Sugar
  • 1/4 cup Olive oil or softened butter
  • 2 Eggs
  • 1/2 cup Peanut butter
  • 1 tsp Vanilla
  • 2 cup Einkorn flour I use fresh milled flour
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda

Instructions

  • In a large bowl, combine the sugar and oil or butter. Mix well until fully combined.
  • Add eggs, vanilla, and peanut butter. Mix well until creamy.
  • In a separate bowl, combine the flour, salt, baking soda, and baking powder.
  • Pour the dry ingredients into the wet ingredients and mix well.
  • Prepare a baking sheet or cookie sheet by lining with a parchment paper.
  • Using a small cookie scoop, scoop the batter onto the baking sheet.
  • Optionally, you can use a fork and criss cross the pattern on top of the cookies.
  • Place the cookies in the fridge for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Once preheated, take cookies out of the fridge and bake in the preheated oven for 15-18 minutes.
  • Cool cookies on a cooling rack completely before storing.

Notes

Store in an airtight container at room temperature for 3-4 days.
Freeze in freezer safe bags for up to 3 months.
