In a large bowl, combine the sugar and oil or butter. Mix well until fully combined.
Add eggs, vanilla, and peanut butter. Mix well until creamy.
In a separate bowl, combine the flour, salt, baking soda, and baking powder.
Pour the dry ingredients into the wet ingredients and mix well.
Prepare a baking sheet or cookie sheet by lining with a parchment paper.
Using a small cookie scoop, scoop the batter onto the baking sheet.
Optionally, you can use a fork and criss cross the pattern on top of the cookies.
Place the cookies in the fridge for 30 minutes.
Preheat the oven to 350 degrees F.
Once preheated, take cookies out of the fridge and bake in the preheated oven for 15-18 minutes.
Cool cookies on a cooling rack completely before storing.
