Sourdough Peach Cobbler

A summer favorite, this cobbler is topped with sweet sourdough biscuits!

Equipment

  • 1 Large mixing bowl
  • 1 medium cast iron skillet

Ingredients

For Sweet Biscuits

  • 2 1/2 cups flour
  • 1/4 cup olive oil
  • 1/2 cup sourdough starter
  • 1/4 cup honey
  • 1/2 cup milk
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda

For Cobbler Mix

  • 4 cups fresh peaches, sliced
  • 1/2 cup sugar
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 tbsp butter

Instructions

  • The night before, in a large mixing bowl, add flour and oil. Mix until crumbly.
  • Add starter, honey, and milk. Mix well. Cover and allow to rise at room temperature for 8-12 hours.
  • The next morning, preheat the oven to 350 degrees F.
  • Heat a medium sized cast iron skillet over medium heat.
  • Add butter, peaches, cinnamon, salt, nutmeg, and sugar. Cook until peaches start to soften, about 10 minutes.
  • Add the salt, baking soda, and baking powder to the biscuit mix. Mix well.
  • Turn over onto a lightly floured surface. Roll out the dough to 1/2 inch thickness and cut out biscuits with biscuit cutter or mason jar lid.
  • Place on top of peach mixture.
  • Bake in preheated oven for 20-25 minutes.
  • Serve with whipped cream or ice cream.

Notes

Serve leftover cobbler in an airtight container in the fridge for 3-4 days.
