Pizza Crust made with Freshly Ground Wheat

This pizza crust is so delicious! It uses freshly ground wheat giving it a nutty flavor full of nutrition.

Equipment

  • 1 12 inch Cast Iron Skillet
  • 1 Stand Mixer optional

Ingredients

  • 1 cup warm water 230 grams
  • 2 1/4 tsp active dry yeast 8 grams
  • 1 tsp sugar
  • 1 tbsp olive oil 13 grams
  • 1 tsp salt 7 grams
  • 2 cups 2 tbsp freshly ground wheat 263 grams

Instructions

  • In the bowl of a stand mixer add the water, yeast, and sugar.
  • Allow to bloom for 5-10 minutes.
  • Add rest of ingredients and knead for 6-8 minutes.
  • Allow to Rise for 30 minutes to 1 hours or until doubled in lightly greased bowl, covered.
  • Preheat oven to 400 degrees F
  • Punch down dough.
  • Grease cast iron skillet and spread the dough evenly.
  • Add toppings.
  • Bake for 25-30 minutes or until the edges of crust are golden brown.

Notes

Double or triple this recipe and store extra crusts in the freezer in a freezer safe bag with a little olive oil to prevent sticking.
Place in freezer after kneaded. No need to let it rise!
