In the bowl of a stand mixer add the water, yeast, and sugar.
Allow to bloom for 5-10 minutes.
Add rest of ingredients and knead for 6-8 minutes.
Allow to Rise for 30 minutes to 1 hours or until doubled in lightly greased bowl, covered.
Preheat oven to 400 degrees F
Punch down dough.
Grease cast iron skillet and spread the dough evenly.
Add toppings.
Bake for 25-30 minutes or until the edges of crust are golden brown.
Notes
Double or triple this recipe and store extra crusts in the freezer in a freezer safe bag with a little olive oil to prevent sticking.Place in freezer after kneaded. No need to let it rise!
