3 Over ripe bananas 1/4 cup Olive oil 1/2 cup Sugar 2 Eggs 1 tsp Vanilla 1 1/2 cups Flour 1/2 tsp Salt 1 tsp Baking Soda
Preheat the oven to 350 degrees F.
Prepare a loaf pan by spraying with oil or lining with a piece of parchment paper.
In a large bowl mash the bananas until creamy and smooth.
Add the oil and sugar and mix well.
Mix in the eggs and vanilla.
Next add the flour, salt, and baking soda.
Whisk this mixture together until smooth and no dry bits of flour remain.
Pour batter into the loaf pan evenly.
Bake in preheated oven for 1 hour or until a toothpick comes out clean when put in the center of the loaf.
Cool completely on a cooling rack before storing.
Store in a plastic bag or airtight container on the counter for 3-4 days.
Freeze in a freezer safe bag for up to 3 months.
